Wine Storage Temperature
Wine is a living, breathing organism that needs to be treated properly. It interacts with the environment, and is vulnerable to the conditions that surrounds it, of which it has no control. A seemingly inert bottle of wine undergoes hundreds of chemical reactions. these chemical reactions can very easily become a collector's nightmare and worst enemy. Temperature is the principal determining factor of how and to what degree these chemical reactions take place, thus the importance of strict temperature control in a wine cellar, or for your collection. Customarily, a constant 55 degrees is the ideal temperature at which to store wine. Some sources claim that this value stems from the temperature of the caves where wine was traditionally stored in France. Different experts assert that temperatures ranging from 50 to 60 degrees, as long as the temperatures remain constant. Just one hour in a hot trunk can produce the same chemical reaction that would take weeks in a properly stored cellar. Storing wine at the ideal temperature allows it to undergo chemical reactions at a rate that produces desirable changes in composition and flavor. Chemical reactions occur with more frequency as temperatures rise, aging more rapidly at higher values. Higher temperature produces undesirable chemical reactions, that may not occur in properly stored bottles. So while planning out your cellar, proper climate control represents the most important component in a celler's construction. So if you are serious about your collection, be serious about the temperature. |
